De Koningshoeven Brewery (Brouwerij de Koningshoeven) is a Dutch Trappist brewery founded in 1884 within the walls of the abbey Onze Lieve Vrouw van Koningshoeven in Berkel-Enschot, the Netherlands.

'La Trappe', the name of the beer brewed in Koningshoeven, was the first Trappist beer in The Netherlands. Only beer brewed in a Trappist monastery under the supervision and responsibility of the monks may be called 'Trappist beer'. La Trappe is brewed according to traditional methods, from a recipe developed by the Trappist monks of Koningshoeven, using only natural ingredients and water drawn from its own well in the beer. The beer top fermented and bottle conditioned, which allows the fermentation process to continue in the bottle giving La Trappe a unique aroma.

The Brewery De Koningshoeven markets five special beers under the brand name La Trappe. In USA and Canada 'La Trappe' is marketed as 'Koningshoeven Trappist Ale'.

Dupont Brewery

Originally dating from 1759, the brewing has been going on since 1844. In 1920 Louis Dupont, an agricultural engineer, was tempted to purchase a farming estate in Canada. In order to keep him in Belgium his father, Alfred Dupont, bought him the Rimaux-Deridder farm-brewery, well known for its honey-flavoured beer "Bière de Miel".

From 1920 onwards, the Dupont brewery has remained an independent company, producing high quality, specialty and innovative beers while keeping traditional manufacturing processes alive. All beers are top fermented and refermented in the bottle.

Ellezelloise (Brasserie des Légendes)

The Brasserie Ellezelloise (pronounced “EL-ZEL-WOZ”), is located in the town of Ellezelles in the gentle “hill country” of Belgium. Founded in 1993, the tiny brewery manages to produce 1000 hectoliters per year - the most of any brewery of the Belgian Artisanal Brewers Guild. Housed in a picturesque converted barn in French-speaking Belgium, the brewery includes a cozy café to which the local folk and connoisseurs from Brussels love to repair on weekend afternoons. There you can enjoy a wonderful Ellezelloise brew, served by the Master Brewer Philippe Gerard who has over 25 years of experience in beer making in several breweries. The main brand of Ellezelloise is "Quintine", named after the witch of Ellezelles.

Traditional brewing techniques have been preserved. The mash tank, the grist filter tank and the flame heated hop kettle are copper. The wooden crates contain 12 or 24 swing top bottles with porcelain stoppers. The brewing method is by infusion. Only basic materials are used : water, barley malt, bitter and aromatic hops, pure yeast base and dextrose. No other ingredients enter into the beer' s composition.

Klosterbrauerei Neuzelle



The Neuzelle Kloster Brewery, located in the town of Neuzelle, Brandenburg, is situated on the grounds of a 12th-century Catholic monastery, and has been producing beer commercially for more than 400 years. Thus, its history parallels that of any number of monastic breweries throughout Germany.

Thanks to the traditional brewing methods connected with the monks, Neuzeller creativity and passion have become a celebration of the senses for the palate and the soul for every beer.

The Neuzeller master brewer offer only a wide variety of unique beer- cherry, Apple, potato, ginger and Allgäuer Heubier as well as the traditional recipes.

St. Sylvestre Brewery

According to the archives of the city hall of Holy Sylvestre Cappel, a brewery existed to the town before the Revolution. In 1860, the brewery was owned by the DEVRIERE family. It changed ownership several times and in 1920, was sold to Rémy RICOUR. Now, three generations of master brewers have developed brewing methods to produce exceptional "biere des gardes".

Dating back to 1107 it was originally a hunting lodge for the kings and queens of Scotland. Later a refuge for Catholic priests in times of terror the Stuarts of Traquair supported Mary Queen of Scots and the Jacobite cause without counting the cost.

When you arrive at Traquair House the entrance is around, rather than through the main gates - and this is why. The Fifth Earl of Traquair, a loyal Jacobite, is associated with one of the most well known episodes in the history of the house; the closing of the Bear Gates. He closed the gates one late autumn day in 1745 after bidding farewell to his guest, Prince Charles Edward Stuart, with a promise that they would not be opened until the Stuarts were restored to the throne. They have remained closed ever since.

The brewery was originally an 18th century domestic brewery producing beer for the house and estate workers. It was disused some time after 1800 but the vessels and equipment remained untouched until it was rediscovered in 1965. Traquair House brewery was founded in 1965 by Peter Maxwell Stuart, the 20th Laird of Traquair. Since his death in 1990, the brewery has been managed by his daughter, Lady Catherine Maxwell Stuart.
