Brewed in the ancient Gallic style for the archaeological site at Aubechies. The Cervesia is a top fermentation beer with refermentation in the bottle. Its floral flavors and spices, fresh and spicy taste are the result of the agitation of a mixture of wheat and barley malt, hops and many herbs and spices added at different stages of its production.
The Cervesia is very fresh and thirst quenching thanks to this association of the malt barley and wheat.

By mixing young (one-year old) Lambic with older Lambic a second spontaneous fermentation in the bottle is obtained. The result is called GUEUZE.

The beer pours with a very fluffy, pillowy, pale colored head which is lightly hazed, gold-straw colored. The aroma is of ripe farmhouse cheese as well as notes of straw and wheat. The beer is extremely tart and sour up front and finishes with a solid astringency with hints of lemon and tart grapefruit flavours. Warming brings out a hint of acetic spiciness that boosts the complexity even a bit more. Very light and spritzy. Beer and Food Pairing: Cheese (buttery; Brie, Gouda, Havarti, Swiss, sharp; Blue, Cheddar, pungent; Gorgonzola, Limburger)

Cuvée des Trolls was born in 2000 in the vats of the “Le Brasse-Temps” micro-brewery created by the Brasserie Dubuisson in Louvain-La-Neuve. It is an unfiltered and therefore naturally cloudy blonde beer. The use of dried orange peel during the boiling gives it the most pleasant fruity aroma, which is in the best possible harmony with a flavour that is full of roundness and finesse.
